Casein Free & Gluten Free Recipe: Coconuttylicious Pancake

Ingredients

  • 4 eggs (in room temperature)
  • 1 cup coconut milk
  • *½ cup organic coconut flour
  • *1 tbsp organic coconut sugar
  • 2 tsps vanilla essence
  • 1 tsp baking powder
  • ¼ tsp sea salt
  • 1 tbsp coconut oil for greasing pan

Methods

  1. Pre-heat the baking pan in the oven at 200°
  2. Beat the eggs before adding coconut milk and vanilla essence.
  3. Add in organic coconut sugar.
  4. Add in the remaining ingredients and whisk until batter is smooth.
  5. Take out the baking pan from oven and grease pan with coconut oil.
  6. Pour the batter in the pan and bake for 10 minutes at 180°
  7. Enjoy the hot pancake!

Casein Free & Gluten Free Recipe: Granola Nutty Bar

Ingredients

  • 3 cups gluten-free rolled oats
  • *1 cup organic coconut chips
  • ½ cup raisins / dried cranberries
  • ¾ cups sliced, raw almonds
  • ¾ cups pumpkin seeds
  • *¾ cups Yemen Sidr honey
  • *½ cup organic coconut sugar
  • 1/3 cup of water
  • 6 tbsp coconut oil
  • *2 tbsp organic chia seeds
  • 1 tsp cinnamon powder
  • *½ tsp ginger powder
  • ¼ tsp nutmeg powder
  • 2 tsp vanilla essence
  • ½ tsp celtic salt

Methods

  1. Preheat oven to 130°
  2. Cover a medium sized baking sheet with parchment paper.
  3. Mix the oats, coconut chips, raisin / dried cranberries, almonds, pumpkin seeds, chia seeds, cinnamon powder, ginger powder, ground­ nutmeg together in a bowl.
  4. Place the coconut sugar in a sauce pan with water on stove top over medium heat. Cook until sugar is dissolved and begins to bubble. Take off heat. Let cool. Combine the dissolved sugar, coconut oil and honey in a small bowl. (Melt the coconut oil over medium heat if it is in solid form).
  5. Stir in vanilla essence and salt.
  6. Pour the liquids over the dry mixture and stir together.
  7. Spread the mixture onto the parchment paper covered pan and bake for 75 minutes or until very slightly browned.
  8. After the granola cools, you can break it up and store in an airtight container for up to 2 weeks.

Casein Free & Gluten Free Recipe: Dark Coco Bites

Ingredients

  • 1 cup extra virgin coconut oil
  • *1 cup organic cacao powder
  • 4 tsps Vanilla essence

Methods

  1. Put the chocolate mold/tray in the refrigerator.
  2. In a bowl, mix coconut oil with cocoa powder.
  3. Add vanilla essence and whisk until the batter is smooth.
  4. Pour the batter into the chocolate mold/tray and chill it in the refrigerator for 1 hour or until it turns hard.
  5. Always keep the chocolates chill and enjoy it whenever you want!
